5 pounds fresh tuna, trimmed and cut into 1-inch steaks
salt and fresh ground black pepper
3 tablespoons olive oil
2 tablespoons fresh lime juice

Season the tuna with salt, pepper, olive oil, and lime juice. Let stand for an hour. Grill the steaks on a fairly hot grill until the fish flakes easily. Serve with a wedge of lime.

Makes 10 servings.
